TASTING NOTES

The nose smells like green hints of salad, arugula and chicory, followed by a note of artichoke.
The entrance into the mouth is characterized by green almond, artichoke and sage. The characteristics of bitter and spicy (the latter characterized by green pepper) are persistent.
The finish is distinguished by a prolonged note of black pepper.

Description

The Extra Virgin Olive Oil ESSENTIA GOCCE D’ORO, IGP “Colline di Firenze” comes from the varieties of frantoio, moraiolo and leccino olives, typical of the Florentine countryside, coming exclusively from the best olive groves which have been present for centuries in the territory of Fiesole. A splendid blend, a synthesis of tradition and territory, an excellent result that bears witness to the passion with which Giovanni Donnini has been committed to its enhancement for years. The olives of Leccino, Moraiolo and Frantoio varieties, all exclusively cultivated and harvested by hand in the Farm owned in Fiesole, are crushed on the same day of their collection at the Pruneti Oil Mill,  that’s innovative and futuristic in crushing and bottling techniques, in order to limit the oxidation of the oil. The immediately filtered oil is then bottled in bottles of 0.25 and 0.50 cl thus ensuring a use with the maximum fragrance as needed.

 

Usage information

Food pairing: Strong bitter and spicy taste, it is ideal on bruschetta with vegetables, lentil salads, marinated with amberjack, tomatoes with rice, bean puree, first course with salmon, shrimp in guazzetto, grilled cuttlefish, poultry or baked lamb meat, goat cheese.
How to use: For seasoning cold and hot dishes with a robust structure. For medium/ long cooking at high temperature.
Storage: In a cool, dry place. Away from light, heat and odours. Once open, minimize exposure to air.
Duration of the product: To be consumed preferably within 18 months from the date of packaging.
